Grilled pineapple with chipotle
Pineapple caramelized over coals with chipotle, honey and lime. A smoky, spicy dessert that almost passes for savory.

Ingredients
- 1 pineapple
- Chipotle powder or in adobo (or smoked paprika with a pinch of cayenne)
- 2 tbsp honey (or brown sugar)
- Butter
- 1 lime and a pinch of salt
Steps
- Peel the pineapple and cut it into thick slices or long wedges.
- Mix melted butter with the honey, the chipotle and a pinch of salt.
- Brush the pineapple on both sides with that mixture.
- Grill it on a hot griddle or grill until it marks and caramelizes on both sides.
- Finish with a squeeze of lime and, if you dare, a little more chipotle.
- Serve it on its own or with a scoop of vanilla ice cream alongside.
