Dense dark-chocolate brownie with cayenne: sweet at first bite, with heat that arrives at the end.

Steps

  1. Melt the chocolate with the butter over a bain-marie and let it cool slightly.
  2. Beat the eggs with the sugar until they almost double in volume.
  3. Combine the two and gently fold in the flour and the cayenne.
  4. Bake at 180 degrees for about 20 minutes: the center should stay moist.
  5. Let it cool before cutting, if you have that kind of patience.
