Dark chocolate melted with chili flakes and spices, set into bars and drops with a spicy edge.

Steps

  1. Melt the dark chocolate over a bain-marie or in the microwave in short bursts, stirring.
  2. If you want shine and snap, temper it: cool it while stirring and gently warm it back up.
  3. Mix most of the chili flakes into the melted chocolate.
  4. Pour into a bar mold, or make small dollops on parchment paper for the drops.
  5. Sprinkle more chili flakes on top along with your favorite variation (salt, ginger, pink pepper).
  6. Let it set at room temperature or in the fridge and break into pieces.
