Tom Yummy
Thai tom yum soup with lemongrass, galangal, kaffir lime and shrimp. A sour, aromatic and properly spicy broth.

Ingredients
- 750 ml stock
- 1 stalk of lemongrass, a few slices of galangal (or ginger) and kaffir lime leaves
- 200 g shrimp (or chicken or mushrooms)
- Mushrooms and 1 tomato
- 2 Thai chiles (or serranos; or chili paste to taste)
- Fish sauce, lime and cilantro
Steps
- Bring the stock to a boil with the crushed lemongrass, the sliced galangal and the lime leaves.
- Add the mushrooms and the tomato in wedges and cook for a couple of minutes.
- Add the shrimp (or the chicken or mushrooms) and cook until they change color.
- Season with fish sauce and the crushed Thai chiles.
- Turn off the heat and only then add the lime juice: if it boils, it turns bitter.
- Serve piping hot with fresh cilantro on top.
