Thai tom yum soup with lemongrass, galangal, kaffir lime and shrimp. A sour, aromatic and properly spicy broth.

Steps

  1. Bring the stock to a boil with the crushed lemongrass, the sliced galangal and the lime leaves.
  2. Add the mushrooms and the tomato in wedges and cook for a couple of minutes.
  3. Add the shrimp (or the chicken or mushrooms) and cook until they change color.
  4. Season with fish sauce and the crushed Thai chiles.
  5. Turn off the heat and only then add the lime juice: if it boils, it turns bitter.
  6. Serve piping hot with fresh cilantro on top.
