Champiviche

A plant-based ceviche: mushrooms cured in lime with red onion, serrano and cilantro. Like ceviche, without the fish.

Steps

  1. Blanch the mushrooms for 1 or 2 minutes (or roast them) to take off the raw edge, and drain them well.
  2. Cut them into strips and mix with plenty of lime juice and salt.
  3. Add the red onion in thin slivers, the chopped serrano and cilantro.
  4. Let it marinate for 15 minutes in the fridge so the lime does its work.
  5. Serve with avocado and toasted corn or tortilla chips for dipping.
