Champiviche
A plant-based ceviche: mushrooms cured in lime with red onion, serrano and cilantro. Like ceviche, without the fish.

Ingredients
- 300 g mushrooms (oyster or button)
- The juice of 4 limes
- 1 red onion
- 1 serrano (or habanero for more fire, or jalapeno for less)
- Cilantro, avocado and salt
- Toasted corn or tortilla chips
Steps
- Blanch the mushrooms for 1 or 2 minutes (or roast them) to take off the raw edge, and drain them well.
- Cut them into strips and mix with plenty of lime juice and salt.
- Add the red onion in thin slivers, the chopped serrano and cilantro.
- Let it marinate for 15 minutes in the fridge so the lime does its work.
- Serve with avocado and toasted corn or tortilla chips for dipping.
