Deviled tequila

Tequila infused at home with fresh chiles. The spicy base for palomas and cocktails with two faces.

Steps

  1. Wash the chiles and cut them lengthwise: the more surface exposed, the faster they release the heat.
  2. Drop them into the bottle of tequila and let it infuse in a dark spot, from 2 or 3 days (mild) up to a couple of weeks (demonic).
  3. Taste it daily: when it reaches your level, strain and remove the chiles so it does not keep climbing.
  4. For the spicy paloma: mix 50 ml of the infused tequila with grapefruit soda, a splash of lime and lots of ice.
  5. Serve with the rim of the glass frosted in salt with chili.
