Spicy tuna onigiri

Japanese rice triangle filled with tuna, mayo and sriracha, dusted with tajin. An onigiri with a double spicy hit.

Steps

  1. Cook the sushi rice following the package and let it cool; it should stay sticky so you can mold it.
  2. Drain the tuna and mix it with the Japanese mayo, the very finely chopped jalapeno and a touch of sriracha.
  3. With damp hands so it does not stick, take a portion of rice and make a hollow in the center.
  4. Fill with the tuna mixture and close the rice over the top.
  5. Press into a flattened triangle shape, without overdoing it so you do not pack it too tight.
  6. Wrap the base with a strip of nori and sprinkle tajin on top before serving.
