Red onion in flames
Red onion quick-pickled in lime with habanero: a fuchsia, spicy condiment for tacos, meats and salads.

Ingredients
- 2 red onions
- The juice of 4 or 5 limes (enough to cover them)
- 1 habanero (or a fresh red chili for less fire, or chili flakes)
- 1 teaspoon salt
- 1 teaspoon sugar
- Fresh cilantro
Steps
- Cut the onions into thin slivers.
- Blanch them for 30 seconds in boiling water and drain: they lose their raw bite but keep their color.
- Pack them into a jar along with the habanero in rings and a few leaves of fresh cilantro.
- Squeeze the limes, dissolve the salt and sugar in the juice, and pour it over the onions until covered.
- Stir, close the jar and let it cool.
- Within an hour they already turn fuchsia and bite; the next day they are top of the class. They keep a good week in the fridge.
