The classic ham-and-cheese toastie with a detour to Seoul: ham, melted cheese, chopped kimchi and a sheet of nori hidden in the centre.

Ingredients
- 2 thick slices of sandwich bread
- 2 slices of cooked ham
- 2 slices of good melting cheese (gouda, havarti or emmental)
- 3 tbsp kimchi, well drained and chopped
- 1 sheet of nori seaweed
- Butter for the pan
Steps
- Drain and chop the kimchi: if it goes in wet, the sandwich turns soggy and sad, and nobody wants that.
- Butter the outer face of both slices (the side that meets the pan).
- Build the inside in this order: cheese, ham, the chopped kimchi, the sheet of nori right in the centre, and another slice of cheese on top. The cheese is the glue that holds the seaweed in place.
- Onto a grill or pan over medium heat, pressing with a spatula, until golden underneath. Flip and repeat until the cheese melts and pulls into strings.
- Cut it on the diagonal and eat it scorching, while the cheese is still stretchy.
