Shrimp aguachile
Raw shrimp cured in lime with a green serrano broth, cucumber and red onion. Mexican and seriously hot.

Ingredients
- 300 g raw peeled shrimp
- The juice of 6 limes
- 2 serrano chiles (or jalapenos for less fire, or chile de arbol for more)
- 1 cucumber and half a red onion
- Fresh cilantro and salt
Steps
- Butterfly the shrimp lengthwise and lay them out in a dish.
- Cover them with the lime juice and salt, and let the acidity cook them for 15 minutes.
- Blend the serranos with a little water and cilantro until you have a green broth.
- Slice the cucumber and onion as thinly as you can.
- Spoon the broth over the shrimp, top with the cucumber and onion, and serve well chilled.
