Raw shrimp cured in lime with a green serrano broth, cucumber and red onion. Mexican and seriously hot.

Steps

  1. Butterfly the shrimp lengthwise and lay them out in a dish.
  2. Cover them with the lime juice and salt, and let the acidity cook them for 15 minutes.
  3. Blend the serranos with a little water and cilantro until you have a green broth.
  4. Slice the cucumber and onion as thinly as you can.
  5. Spoon the broth over the shrimp, top with the cucumber and onion, and serve well chilled.
