Uses
The base of marinades such as al pastor adobo and of birria, to which it gives its trademark red. Also in salsas, moles and broths. It is rehydrated and blended into a smooth, glossy base.
About this chile
It is the mirasol chile once dried, and one of the most widely used dried chiles in all of Mexico. Its flavour combines green-tea notes with a hint of red berries and a light tang. It is responsible for the deep, glossy red of birria broth and of many adobos, where it brings more colour and flavour than heat.
