Large, meaty and mild, it is ideal for stuffed chiles, for Southwestern green chile stew and, roasted Hatch-style, for mild salsas and side dishes. Also canned and in strips over fajitas.
About this chile
It takes its name from the city of Anaheim, California, where a farmer began cultivating it in the early twentieth century. It is a very close relative of the famous Hatch green chile from New Mexico, so much so that many treat them as siblings. Its large size and thick flesh make it perfect for stuffing and roasting.
