Steps

  1. Toast the raw rice in a dry pan until golden and grind it: that toasted powder is the soul of laab.
  2. Saute the pork without oil, breaking it up with the spoon, until it browns in its own juices.
  3. Off the heat, season with fish sauce, lime juice and the chili flakes.
  4. Add the shallot and spring onions in slivers, the mint and the cilantro.
  5. Sprinkle the ground toasted rice and mix well.
  6. Serve with lettuce leaves to wrap and crackers or puffed rice for the crunchy contrast.
