Pork laarb with rice crackers
Thai minced-pork salad with herbs, lime and toasted rice powder. Fresh, spicy and with an addictive crunch.

Ingredients
- 300 g ground pork
- 1 tbsp raw rice (for the toasted powder)
- 1 shallot and 2 spring onions
- Mint and cilantro
- Fish sauce and the juice of 1 lime
- Thai chili flakes (or any ground dried chili, or cayenne, used carefully)
- Lettuce leaves and crackers or puffed rice
Steps
- Toast the raw rice in a dry pan until golden and grind it: that toasted powder is the soul of laab.
- Saute the pork without oil, breaking it up with the spoon, until it browns in its own juices.
- Off the heat, season with fish sauce, lime juice and the chili flakes.
- Add the shallot and spring onions in slivers, the mint and the cilantro.
- Sprinkle the ground toasted rice and mix well.
- Serve with lettuce leaves to wrap and crackers or puffed rice for the crunchy contrast.
