Spicy cucumber chow chow
A sweet-and-sour Southern US pickle of cucumber, pepper and onion, spiced and hot, to use up the garden.

Ingredients
- 2 cucumbers
- 1 green pepper
- 1 onion
- 1 or 2 chiles (jalapeno or serrano; or chile de arbol; or flakes)
- 200 ml vinegar and 3 tbsp sugar
- Salt, mustard seeds and turmeric
Steps
- Finely dice the cucumber, the pepper, the onion and the chili.
- Mix them with salt and let them rest for an hour; then drain the water they release.
- Heat the vinegar with the sugar, the mustard seeds, the turmeric and a pinch of salt until dissolved.
- Add the vegetables and cook for 5 to 8 minutes, so they stay between crunchy and tender.
- Transfer to a jar with its liquid and let it cool.
- Serve alongside grilled meats, hot dogs, legumes or a good cheese.
