Spicy cucumber chow chow

A sweet-and-sour Southern US pickle of cucumber, pepper and onion, spiced and hot, to use up the garden.

Steps

  1. Finely dice the cucumber, the pepper, the onion and the chili.
  2. Mix them with salt and let them rest for an hour; then drain the water they release.
  3. Heat the vinegar with the sugar, the mustard seeds, the turmeric and a pinch of salt until dissolved.
  4. Add the vegetables and cook for 5 to 8 minutes, so they stay between crunchy and tender.
  5. Transfer to a jar with its liquid and let it cool.
  6. Serve alongside grilled meats, hot dogs, legumes or a good cheese.
