Express patatas bravas
Fried potatoes with a quick brava sauce of sriracha and Japanese mayo. The bar classic in five minutes.

Ingredients
- 4 medium potatoes
- 2 tbsp sriracha (or any chili-garlic sauce, or a fresh red chili, finely chopped)
- 3 tbsp Japanese mayo
- Smoked paprika
- Olive oil and salt
Steps
- Peel and cut the potatoes into thick cubes; fry until golden and crisp.
- Mix the sriracha with the Japanese mayo into an innocent-looking pink sauce.
- Drain the potatoes, salt them, spoon the sauce over and dust with smoked paprika.
- Serve straight away, while they are still crunchy.
